I LOVE bank holidays, do you? I know I'm a student and currently every day is basically a bank holiday but I am enjoying Andy being off work so much at the moment. I complained about Easter being late this year but actually it's meant having all these long holidays so close together!
I've just finished my assignment for tomorrow (Yey) so am taking a study break by blogging.
Firstly, until I googled it I had no idea what Cinco De Mayo WAS! So, I'm not sure this post will accurately stick to the topic.
What I do know though is Mexican food. I LOVE Mexican food - partly because I love chilli but also because I think it's a really sociable food.
This is my recipe for enchilada sauce.
Obviously, you can just buy packet stuff but this is lovely and probably cheaper....
(sorry it's not a full recipe for enchiladas)
Sooo... make up your enchiladas (if you're cooking for me I like chicken ;-)) and place them in a baking tray.
This is the sauce that goes over the top.
You'll need:
- Pasata (I normally use just shy of one carton.. use the rest to make salsa!)
- Cumin (this is THE mexican tasting ingredient. it's essential)
- Garlic (crushed.. mm I LOVE garlic.. use however much you want!)
- Chilli (I use flakes or powder but use the fresh stuff if you want)
- Salt
- Pepper
Other bits you can add if you have it (we're a bit of an odd student house and have strange sauces/condiments/spices around)
- Balsamic vinegar
- Tabasco sauce
Put it all in a pan and heat up! Taste as you go... add a little bit of this, a little bit of that... until you think it tastes like enchilada sauce !!
Then. pour over your ready to go wraps and round the sides.. cover it!... put a ton of grated cheese on top (and maybe some sour cream or you can add that later!) and bake (again.. this isn't a full recipe so I can't tell you how long for)
