Healthy Chicken Kebabs

It's not very often I really crave a chicken kebab, normally it's towards the end of a night out after a few drinks, but the other day my colleague devoured one at work and it got me thinking that, if it's made right kebabs can't be that unhealthy. So I set about making a healthy version. 

I'm following slimming world but this wouldn't necessarily count as an "on plan" meal because of the pitta breads. But i'd argue there are worse things you can eat then a couple of wholemeal pitta breads!

For the chicken I adapted this recipe

Main Ingredients:

Chicken Breast (I used two for 4 kebabs)
Salad of your choice
Red Onion (or white)
Yoghurt Dressing
Pitta Bread 

Optional:
Chili Sauce (we made our own) 

Yoghurt dressing/Marinade:
300ml Fat Free plain Yoghurt 
1 inch Fresh ginger chopped
3 garlic cloves, crushed 

1 tsp coriander (I used frozen from Waitrose but you could use fresh or dried)
1 tsp cumin
1/2 red chilli 
Salt
Pepper



Method:

1. Mix together ingredients for yoghurt dressing marinade. You can put them in to a food processor so it's all smooth but I actually quite liked the odd bit of ginger. Retain some to use as a dressing later.
2. Make diagonal slashes in the chicken breasts and cover with the marinade - leave for as long as possible. We left it about 4 hours but anything up to 24 would be ideal. 
3. When ready, bake at 200oC for 20 minutes, you could remove from the marinade but we just left it and it was fine.
4. Once chicken is nearly ready fry the red onions 
5. toast the pitta breads and cut open (be careful they get so warm)
6. Once chicken is cooked slice into smaller pieces 
7. Stuff the pitta bread with salad, chicken, red onion and top with yoghurt dressing and chili sauce if using.
8. Enjoy! 

We served them as were but you could serve with more salad or some chips.
