The BEST Portobello Mushroom Burgers

Hi beauties
So one of the best things about America was the food! Pretty early on to being here we went to Saul Good and had the most amazing Portobello mushroom burgers. 

Wellllllll we decided to try and recreate them and then I thought I'd share the recipe with you. We did a TON of research so we can't take all the credit for these recipes.





Ingredients: (in American measurements) 

Pesto (you can make your own-I've included the recipe or buy some)
1 handful - pine nuts
1/2 cup of olive oil
1/4 cup of parmesan cheese
1/2 cup  of purple basil (or normal basil)
salt & pepper
1/2 clove of garlic 

Burgers: 
Portobello mushroom
Cheese (we used pepper jack)
Olive Oil
Salt
Pepper
Cayenne Pepper
Italian herbs 
Rolls (we used ciabatta)

Extras:
Red bell pepper
Lettuce
Tomato 





1. Put oil, pine nuts, basil, parmesan and garlic in to a food processor and blend. Add salt and pepper to taste. 




2. Make marinade by mixing olive oil, salt, pepper, cayenne pepper and Italian herbs together in a bowl. 




3. Remove stalks from mushrooms and brush with marinade. 



4. Place on a baking sheet and bake at a medium temp (350 F/ 190C/ Gas 5) for about 10 minutes. You may notice that they are quite oily- we just tipped some of this off. 
5. Whilst baking- cut the bell pepper in to strips and fry in oil with salt and pepper until soft.



6. Place a slice of cheese on top of the mushrooms and place back in oven for a couple of minutes until cheese is melted.



7. Whilst cheese is melting- toast the buns. 
8. Assemble burger:

  • spread one side of bun with pesto
  • place mushroom on other side
  • top with peppers
  • top with lettuce & tomato 


9. ENJOYYYYY!!! 

(and then toast another bun and top with more pesto...mmmmm!)
